These Apple Pie Cupcakes bring together the cozy flavors of spiced apples and the Italian love for simple, heartwarming desserts. A soft vanilla cupcake base, made with Vava Vanilla AMORE Mix, is topped with cinnamon-spiced apples and creamy cinnamon frosting.

What you need

  • Cupcake base
  • 1 cup Vava Vanilla AMORE Mix
  • 2 tbsp sugar (optional; the mix is lightly sweet already)
  • 1 large egg
  • 2 tbsp melted butter (or neutral oil)
  • ½ cup milk (dairy or plant-based)
  • ½ tsp vanilla extract (optional, enhances the mix’s flavor)
  • Sautéed Apple Topping
  • ½ medium apple, peeled & finely diced
  • ½ tbsp butter
  • ½ tbsp brown sugar
  • ¼ tsp ground cinnamon
  • Pinch of nutmeg (optional)
  • Cinnamon Cream Cheese Frosting
  • 3 oz (⅔ block) cream cheese, softened
  • 1 tbsp butter, softened
  • ⅔ cup powdered sugar
  • ¼ tsp ground cinnamon
  • ⅛ tsp vanilla extract

How to do it

  1. BAKE the Mini Cupcakes: Preheat oven to 350 °F (175 °C) and line two mini muffin pans with liners.
  2. WHISK together egg, melted butter, milk, and vanilla (if using) in a bowl.
  3. ADD the AMORE mix and sugar; stir until smooth.
  4. FILL each mini liner about ¾ full.
  5. BAKE for 10–12 minutes or until a toothpick comes out clean. Let cool completely.
  6. PREPARE the Sautéed Apple Topping: In a small skillet, melt butter over medium heat.
  7. ADD diced apple, brown sugar, cinnamon, and nutmeg.
  8. COOK for 5–7 minutes, stirring occasionally, until soft and caramelized.
  9. COOL to room temperature.
  10. MAKE the Cinnamon Cream Cheese Frosting: In a bowl, beat softened cream cheese and butter until creamy.
  11. ADD powdered sugar, cinnamon, and vanilla; beat until smooth. Chill briefly to firm up.
  12. ASSEMBLE the Cupcakes: Pipe or spread frosting onto each cooled cupcake.
  13. TOP with a small spoonful of sautéed apples.
  14. OPTIONAL: drizzle with caramel sauce or a light dusting of cinnamon sugar for visual appeal.
