Blueberry Mini No-Bake Cheesecakes

These Blueberry Mini No-Bake Cheesecakes combine Dilettoso's Bella Berry AMORE Mix with a creamy cheesecake layer of cream cheese, Greek yogurt, and a hint of monk fruit sweetness. Topped with fresh blueberries and fluffy whipped cream, they’re a guilt-free, no-bake delight perfect for any occasion.
What you need
- Cheesecake Base
- 1 1/2 cup of Dilettoso's Bella Berry AMORE Mix
- 7 tbsp of melted coconut oil
- 1 tsp of vanilla extract
- Cheesecake Layer
- 1 cup of cream cheese (room temperature)
- 1/2 cup of whole milk greek yogurt
- 1 tsp of vanilla extract
- 3 tbsp of gelatin
- 1/3 cup of granulated monk fruit
- 2/3 cup of water
- 1/3 cup of blueberries
- Topping
- 2/3 cup of sliced blueberries
- 2 cups of whipped cream
How to do it
- MIX the ingredients for the base until fully combined.
- PRESS the dough into 9 silicone muffin cups and refrigerate for a couple of minutes.
- SPRINKLE the gelatin over the water and let it bloom for 5-10 minutes.
- MIX the cream cheese with greek yogurt, vanilla extract and granulated monk fruit in a large bowl.
- ADD the beef gelatin into the cheesecake mix and blend well. Fold in the blueberries.
- TOP each mini pie with cheesecake mix and refrigerate for at least 3 hours.
- TOP with whipped cream and blueberries, enjoy!
