Choc-o-lotta Muffins

30 Minutes • Servings: 10 Muffins
These Choc-o-lotta muffins are so moist, so fluffy, and so healthy! Almost too good to be true, except it is true.

What you need

  • 1 3/4 Cups Choc-o-lotta Dilettoso Mix
  • 1/2 Cup Coconut Oil, Melted (Sub with Ghee or Grass Fed Organic Butter, Melted)
  • 1 Cup Greek yogurt or any plain dairy-free yogurt
  • 2 Large Eggs
  • 1/2 Cup Sugar-free Dark Chocolate Chips
  • 1/3 Cup Chopped Macadamia Nuts or Cashew Nuts

How to do it

  1. PREHEAT the oven to 350°F. Grease and line a 12-count muffin pan with muffin liners and set aside.
  2. ADD the wet ingredients to a bowl, and mix until just combined.
  3. SIFT in your Choc-o-lotta Dilettoso Mix, the chocolate chips, and the chopped nuts. Now combine well with a spatula.
  4. DISTRIBUTE the batter evenly amongst the 12 muffin liners. Bake the muffins for 20-25 minutes, or until a skewer comes out mostly clean.
  5. REMOVE the muffins from the oven and let them cool in the pan for 10 minutes, before enjoying them with your favorite beverage.
