Double Chocolate Sweet Potato Donuts

These Double Chocolate Sweet Potato Donuts are a quick and indulgent treat. Made with wholesome sweet potatoes, they’re baked to perfection and coated in rich dark chocolate with a sprinkle of coconut. Ready in just 20 minutes, they’re the perfect balance of healthy and decadent for any chocolate lover.
What you need
- 3/4 Cup Dilettoso's Choc-o-lotta Amore Mix
- 1/2 Cup Cooked Mashed Sweet Potato (from 1 medium to large sweet potato)
- 1 1/2 Tablespoons Coconut oil (substitute with Olive Oil or Melted Ghee)
- 1 Large Egg
- 1/2 Teaspoon ground cinnamon
- 2.5 oz (⅓ cup) Dark Chocolate
- 1/3 cup Coconut Flakes

How to do it
- PREHEAT the oven to 350 degrees F. Grease a donut pan with nonstick cooking spray.
- USE a large bowl to mix together the sweet potato, egg, and oil until smooth and creamy.
- ADD the Choc-o-lotta Dilettoso mix and gently stir until just combined. Avoid overmixing here as it can make the donuts tough instead of light and fluffy.
- SPOON the batter into the donut pan, filling almost to the top.
- BAKE for about 25-30 minutes or until a toothpick comes out clean.
- TURN the donuts onto a wire rack to cool completely.
- MELT the chocolate in a small saucepan over very low heat; stir continuously until chocolate is melted. You can add a tablespoon of oil too, if needed.
- TRANSFER the chocolate to a warm bowl and dip each donut in the chocolate, then transfer to a wire rack.
- REPEAT with remaining donuts.
- TOP each donut with a tablespoon of coconut flakes, and enjoy!
