Peekaboo Kalapple Cake

Can you spot the veggies in this dessert? This tasty little cake has a fun way of sneaking some greens into your sweet routine. Made from a mixture of fresh kale and juicy apples, it packs a nutritional punch. Then top it with a smooth yogurt based frosting for a creamy, dreamy finish.
200 gr Loosely Packed Kale (raw, woody stalks discarded)
3 Eggs
100ml Oil of choice (we used Melted Ghee)
100g Applesauce (see Hot Hot Hot Tip on how to make your own)
2 Apples, Peeled and Grated
Healthy frosting: 2 cups thick greek yogurt, 1 tablespoon of stevia (sub with honey or icing sugar), ½ teaspoon vanilla extract
Toppings: Fresh Blueberries

How to do it
PREHEAT the oven to 180°C/350°F. Grease and line a 8”(20cm) round cake pan with baking paper or grease with oil.
TEAR the kale leaves into bite-sized pieces and boil or steam for 3-5 minutes until tender. Refresh by running under cold water, drain and squeeze out the excess liquid.
ADD the kale to a blender (or a large bowl and use a stick blender) with the eggs, oil, vanilla, applesauce and whiz until smooth.
POUR the blended kale mixture into a mixing bowl. Squeeze the excess moisture out of the grated apple, then add the apple to the bowl and stir to combine.
ADD in the Dilettoso Mix and gently combine, taking care not to over-mix.
POUR the batter into the prepared pan and bake for 20-25 minutes or until an inserted toothpick comes out clean.
MAKE the healthy frosting: Using an electric hand mixer set on medium speed, beat together the yogurt, vanilla, and sweetener, until the frosting thickens, about 2 minutes. Cover and place in the fridge for 30-60 minutes while you bake and cool your cake.
REMOVE the cake from the oven to cool completely.
SPREAD your healthy frosting, slice a generous portion and enjoy!
1. If you don't have applesauce, just peel, core and slice some apples, steam until soft and puree.
2. Puree the kale with the other wet ingredients in a blender. That ensures the kale is fully pureed and the kale is very green!
