How to do it
- PREHEAT the oven to 180°C/350°F. Grease and line a 8”(20cm) round cake pan with baking paper or grease with oil.
- TEAR the kale leaves into bite-sized pieces and boil or steam for 3-5 minutes until tender. Refresh by running under cold water, drain and squeeze out the excess liquid.
- ADD the kale to a blender (or a large bowl and use a stick blender) with the eggs, oil, vanilla, applesauce and whiz until smooth.
- POUR the blended kale mixture into a mixing bowl. Squeeze the excess moisture out of the grated apple, then add the apple to the bowl and stir to combine.
- ADD in the Dilettoso Mix and gently combine, taking care not to over-mix.
- POUR the batter into the prepared pan and bake for 20-25 minutes or until an inserted toothpick comes out clean.
- MAKE the healthy frosting: Using an electric hand mixer set on medium speed, beat together the yogurt, vanilla, and sweetener, until the frosting thickens, about 2 minutes. Cover and place in the fridge for 30-60 minutes while you bake and cool your cake.
- REMOVE the cake from the oven to cool completely.
- SPREAD your healthy frosting, slice a generous portion and enjoy!
