Pillowy Plum Mini Cake

What you need
- ½ Cup Choc-o-lotta Dilettoso Mix
- 1 Egg
- 1/4 Cup Milk of Choice
- 1 Tablespoon Collagen or Protein powder, Optional
- 1 Teaspoon Ghee or oil of choice (opt for a neutral oil, such as avocado or MCT oil)
- 1 Ripe Plum
- Dash of Cinnamon
- Half of a Lemon Juice

How to do it
- 1. PREHEAT oven to 350ºF (180ºC).
- 2. SLICE your juicy plum, add a dash of cinnamon, and squeeze half of a lemon. Let marinate. The riper the plum the better, as it will turn into a jam texture, once cooked.
- 3. ADD to a small bowl the egg, ghee, milk, and whisk.
- 4. ADD Choc-o-lotta Dilettoso Mix to the wet mixture, and stir until you reach a smooth batter.
- 5. POUR the batter into a lightly greased oven-safe ramekin, then stir in your juicy pre-sliced plum.
- 6. BAKE in a preheated oven for 35 minutes.
- 7. SERVE warm with a tablespoon of thick Greek yogurt and a generous agave drizzle.
