Pillowy Plum Mini Cake

This delectable chocolate plum cake is a symphony of flavors and textures. Each bite is pillowy soft, inviting you to sink your teeth into its rich and chocolaty crumb. The juicy sweetness of the plums adds a burst of fruity goodness that tantalizes your taste buds.

What you need

  • ½ Cup Choc-o-lotta Dilettoso Mix
  • 1 Egg
  • 1/4 Cup Milk of Choice
  • 1 Tablespoon Collagen or Protein powder, Optional
  • 1 Teaspoon Ghee or oil of choice (opt for a neutral oil, such as avocado or MCT oil)
  • 1 Ripe Plum
  • Dash of Cinnamon
  • Half of a Lemon Juice

How to do it

  1. 1. PREHEAT oven to 350ºF (180ºC).
  2. 2. SLICE your juicy plum, add a dash of cinnamon, and squeeze half of a lemon. Let marinate. The riper the plum the better, as it will turn into a jam texture, once cooked.
  3. 3. ADD to a small bowl the egg, ghee, milk, and whisk.
  4. 4. ADD Choc-o-lotta Dilettoso Mix to the wet mixture, and stir until you reach a smooth batter.
  5. 5. POUR the batter into a lightly greased oven-safe ramekin, then stir in your juicy pre-sliced plum.
  6. 6. BAKE in a preheated oven for 35 minutes.
  7. 7. SERVE warm with a tablespoon of thick Greek yogurt and a generous agave drizzle.
