How to do it

  1. BEAT the egg, in a mixing bowl together with pumpkin puree, nut butter, ground cinnamon, and a pinch of nutmeg. Whisk until smooth.
  2. ADD Va Vanilla Dilettoso Mix to the pumpkin mixture, then stir until combined. For fluffy pancakes, do not overmix batter.
  3. SPRAY a griddle or pan with cooking spray and place over medium-high heat. Once hot, pour a scoop of batter into the pan.
  4. COOK your pancakes over medium-high heat until the underside is golden and bubbles begin to appear on the surface, then flip with a spatula and cook until golden.
  5. TOP with a drizzle of honey, a sprinkle of cinnamon, and pumpkin seeds for crunchiness.
  6. NOW Enjoy!

Did you know?

Pumpkins are good for your beautiful eyes! They are rich in beta carotene, an antioxidant that your body turns into vitamin A. Vitamin A helps sharpen your vision, allowing you to see more clearly in low light. It also helps support the health of your retina and cornea. Pumpkins are also high in vitamin C, which reduces your risk of developing macular degeneration and cataracts.
