Toppings: Pumpkin Seeds, Honey, Sprinkle of Cinnamon
Hot Hot Hot
How to do it
BEAT the egg, in a mixing bowl together with pumpkin puree, nut butter, ground cinnamon, and a pinch of nutmeg. Whisk until smooth.
ADD Va Vanilla Dilettoso Mix to the pumpkin mixture, then stir until combined. For fluffy pancakes, do not overmix batter.
SPRAY a griddle or pan with cooking spray and place over medium-high heat. Once hot, pour a scoop of batter into the pan.
COOK your pancakes over medium-high heat until the underside is golden and bubbles begin to appear on the surface, then flip with a spatula and cook until golden.
TOP with a drizzle of honey, a sprinkle of cinnamon, and pumpkin seeds for crunchiness.

Did you know?
Pumpkins are good for your beautiful eyes! They are rich in beta carotene, an antioxidant that your body turns into vitamin A. Vitamin A helps sharpen your vision, allowing you to see more clearly in low light. It also helps support the health of your retina and cornea. Pumpkins are also high in vitamin C, which reduces your risk of developing macular degeneration and cataracts.
Pumpkin puree from a can works great, but if you have time to make it homemade, here is how! First peel the pumpkin, then cook it. You can either boil, steam, bake or air fry it. Once tender, place it in a food processor and blend until smooth.
