Pumpkin Pie Pancake Tacos

A playful twist on a Fall favorite, these Pumpkin Pie Pancake Tacos fold seasonal flavors into every bite. With Dilettoso Vava Vanilla Mix, these delightful creations blend the cozy warmth of pumpkin pie with the fluffy goodness of pancakes. Top with whipped cream and pecans for a taco-tastic treat that’s pure autumn bliss.

What you need

  • 1 cup Vava Vanilla Dilettoso Mix
  • 1/2 cup Water or Milk of Choice
  • 1 tsp Ground Cinnamon
  • Cooking spray of choice or butter (we use avocado oil)
  • Pumpkin Pie Filling:
  • 1/2 cup of full fat greek yogurt (or 4 oz Cream Cheese softened)
  • 1/4 cup Powdered Monk Fruit
  • 3/4 cup Canned Pumpkin Puree
  • 1/2 tsp Pure Vanilla Extract
  • 1 1/2 tsp Pumpkin Pie Spice
  • Extra Toppings:
  • Whipped Cream
  • Pecan Halves
  • Dust of Ground Cinnamon

How to do it

  1. MIX Dilettoso Vava Vanilla Pancakes & More mix according to package instructions with either water or milk (we used unsweetened vanilla almond milk). Set aside.
  2. PREPARE the Pumpkin Pie filling: whisk the softened yogurt or cream cheese with powdered monk fruit, vanilla extract, and cinnamon. Now add the pumpkin puree and stir to combine. Set aside.
  3. HEAT & SPRAY your skillet with cooking oil of choice.
  4. POUR batter onto a skillet to make pancakes.
  5. REMOVE pancakes from the skillet.
  6. STUFF the pancake tacos with the Pumpkin Pie filling and toppings!
