What you need
- 2 ½ cups Vava Vanilla Dilettoso Mix
- 1 ½ cups finely grated carrots
- 3 large eggs
- ⅓ cup melted butter or neutral oil (like avocado or coconut)
- ⅔ cup honey
- 1 tsp cinnamon
- ½ tsp ground ginger
- ½ tsp baking soda
- ½ cup chopped walnuts or pecans (optional but delicious)
- For the salted honey frosting:
- 8 oz cream cheese, softened
- ¼ cup honey
- 2 tbsp softened butter
- ½ tsp fine sea salt, or to taste
- 1 ½ cups powdered sugar, more for thicker frosting

How to do it
- PREHEAT your oven to 350°F (175°C) and grease or line two 8-inch round cake pans with parchment paper.
- COMBINE the grated carrots, Dilettoso Vanilla Baking Mix, cinnamon, ginger, and baking soda in a large bowl. Mix well.
- BEAT the eggs, honey, and melted coconut oil (or butter), in a separate bowl until smooth.
- ADD the wet ingredients to the dry ingredients and stir until just combined. If using, fold in the chopped walnuts or pecans.
- DIVIDE the batter evenly between the two prepared cake pans and smooth the tops.
- BAKE for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- MAKE THE FROSTING: While the cakes cool, beat together the cream cheese, honey, vanilla, sea salt, and melted butter in a medium bowl until smooth and creamy. Gradually add powdered sugar until you reach your desired frosting thickness.
- ASSEMBLE: Once the cakes have cooled completely, spread a layer of frosting between the two layers. Frost the top and sides of the cake with the remaining frosting.
