How to do it

  1. PREHEAT your oven to 350°F (175°C) and grease or line two 8-inch round cake pans with parchment paper.
  2. COMBINE the grated carrots, Dilettoso Vanilla Baking Mix, cinnamon, ginger, and baking soda in a large bowl. Mix well.
  3. BEAT the eggs, honey, and melted coconut oil (or butter), in a separate bowl until smooth.
  4. ADD the wet ingredients to the dry ingredients and stir until just combined. If using, fold in the chopped walnuts or pecans.
  5. DIVIDE the batter evenly between the two prepared cake pans and smooth the tops.
  6. BAKE for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. MAKE THE FROSTING: While the cakes cool, beat together the cream cheese, honey, vanilla, sea salt, and melted butter in a medium bowl until smooth and creamy. Gradually add powdered sugar until you reach your desired frosting thickness.
  8. ASSEMBLE: Once the cakes have cooled completely, spread a layer of frosting between the two layers. Frost the top and sides of the cake with the remaining frosting.
  9. GARNISH with a sprinkle of sea salt on top, and a drizzle of honey if desired.
