What you need
- 1 1/2 cups of Vava Vanilla Dilettoso Mix
- 1 tsp of baking powder
- 2/3 cup granulated monk fruit sweetener
- 3/4 cup almond butter
- 2 large organic eggs
- 1 tsp of vanilla extract
- 1 pinch of sea salt
- FOR THE FILLING
- 1 block of of cream cheese room temperature
- 1/2 cup of frozen strawberries
- 1 cup of powdered monk fruit
- 1 tsp of vanilla extract
How to do it
- PREHEAT Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- MIX Dry Ingredients: In a bowl, combine the Dilettoso Vava Vanilla mix, baking powder, sea salt, and granulated monk fruit sweetener.
- ADD Wet Ingredients: Stir in the almond butter and organic eggs until a cohesive dough forms.
- Shape Cookies: Scoop out the dough and form into 10 large cookies, placing them onto the prepared baking sheet.
- BAKE in the preheated oven for about 10 minutes until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
- PREPARE the Filling: Microwave the frozen strawberries for 1 minute. In a mixing bowl, beat the cream cheese, powdered monk fruit, heated fruit, and vanilla extract until smooth and well combined.
- ASSEMBLE the Sandwiches: Spread the filling generously between two cookies to create a sandwich. Decorate with sprinkles
