Carrot Cake Energy Bites

All the flavors of carrot cake without the hassle of baking, ready in 10 min. Chewy, cinnamony, cake-bally, and just the right amount of sweet. The perfect on-the-go snack that happens to be vegan too!
What you need
- 1 Cup Vava Vanilla Dilettoso Mix
- 2 Medium Carrots, Peeled and Chopped
- 1/3 Cup Almond Butter
- 1/3 Cup Shredded Unsweetened Coconut
- ½ Cup Chopped Walnuts
- 1 Teaspoon Cinnamon
- 2 Tablespoons Sugar-free White Chocolate Chips (optional)

How to do it
- PLACE carrot chunks into the bowl of a food processor and pulse until finely chopped.
- ADD all other ingredients, then pulse until a sticky dough forms. You might have to push it down with a spatula a few times to help it along.
- SCOOP out dough and roll between your hands to form golf size balls. You should be able to shape about 16 balls.
- ROLL each ball into unsweetened desiccated coconut.
- REFRIGERATE for at least 15 minutes to firm up if desired or eat straight away.
