Carrot Cake Energy Bites

10 Minutes • Servings: 16 Balls
All the flavors of carrot cake without the hassle of baking, ready in 10 min. Chewy, cinnamony, cake-bally, and just the right amount of sweet. The perfect on-the-go snack that happens to be vegan too!

What you need

  • 1 Cup Vava Vanilla Dilettoso Mix
  • 2 Medium Carrots, Peeled and Chopped
  • 1/3 Cup Almond Butter
  • 1/3 Cup Shredded Unsweetened Coconut
  • ½ Cup Chopped Walnuts
  • 1 Teaspoon Cinnamon
  • 2 Tablespoons Sugar-free White Chocolate Chips (optional)

How to do it

  1. PLACE carrot chunks into the bowl of a food processor and pulse until finely chopped.
  2. ADD all other ingredients, then pulse until a sticky dough forms. You might have to push it down with a spatula a few times to help it along.
  3. SCOOP out dough and roll between your hands to form golf size balls. You should be able to shape about 16 balls.
  4. ROLL each ball into unsweetened desiccated coconut.
  5. REFRIGERATE for at least 15 minutes to firm up if desired or eat straight away.
