Coco Protein Balls

10 Minutes • Servings: 18 Balls

What you need

  • ½ Cup Vava Vanilla Dilettoso Mix
  • ¼ Cup Macadamia Nuts or Cashew Nuts
  • 1 Cup Unsweetened Desiccated Shredded Coconut
  • 1 Tablespoon Collagen Powder (Optional)
  • 2 Tablespoons Protein Powder, Flavorless or Vanilla Flavor (Optional)
  • ¼ Cup Coconut Milk
  • To coat the energy balls: ⅓ cup Unsweetened Desiccated Shredded Coconut

How to do it

  1. BLEND Macadamia Nuts or Cashew Nuts in a food processor, on the high-speed setting until pulsed into small crumbles.
  2. ADD the dry ingredients to a large bowl and combine: Vava Vanilla Dilettoso Mix, unsweetened desiccated coconut, collagen powder (optional).
  3. POUR coconut milk into the food processor, then add all the dry ingredients.
  4. BLEND again on the high-speed setting until it forms a sticky dough that comes together. If needed, add a tablespoon or two or coconut milk.
  5. SCOOP out one tablespoon of batter, roll into balls between your hands, then roll into the desiccated coconut to coat.
  6. PLACE the balls on a plate covered with parchment while you roll the remaining batter into energy balls.

Did you know?

You can keep these energy balls in an airtight container in the fridge for up to 1 week. Or, you can freeze the coconut balls in zip lock bags and thaw for 3 hours at room temperature before eating.
